No need to leave him a mince pie. He’s bringing dinner…

London’s Mexican food scene is, generally, a little “meh”. There are a few exceptions however, of which Santo Remedio leads the way.

Edson Diaz-Fuentes’ cooking means it’s worth a visit anytime but, later this month, Edson is letting another chef lead the kitchen for something that should be very exciting indeed. And it’s called Mesa Santa…

Mesa Santa is a five course tasting menu dining series at Santo Remedio, that sees some great guest chefs head up the kitchen. Kicking things off is Diego Hernandez, Tijuana born and raised chef and DJ whose restaurant Corazon de Tierra, in Ensenada, Baja California, has been named as one of Latin America’s 50 Best. It’s also one of Edson’s favourites.

In a twist from many a guest chef dinner, Diego, Edson and the team will prepare a very special Mexican Sunday Roast on 26th February, with a menu including charcoal grilled oysters with butter and salvia (prepared by Diego) and oysters aguachile rojo with pickled red onion and fennel (prepared by Edson). This will be followed by red and black adobo whole roasted suckling pig served with salsas, frijoles puercos and handmade flour tortillas. This will be available for sharing family style, with either a half or a quarter suckling pig available or tacos prepared for your table. Prices will be available per item on the specials board on the day.

On 27th February and 28th February Diego will lead the way on a five-course tasting menu with drinks pairings, including dishes such as black seabass ceviche, a swiss chard tamal with quail, and turbot with green rice and seasonal mushrooms.
