There are pop-ups. And there are Carlo Scotto pop-ups.

In advance of opening his new restaurant Amethyst in Mayfair, Michelin-experienced, Italian-born chef Carlo Scotto will be testing the waters with a short run at the Four Seasons Hotel London at Park Lane.

Formerly of Xier in Marylebone, where he had the likes of Grace Dent waxing lyrical that his food is how she hopes heaven will be, Scotto is bringing a seven-course experimental menu to the hotel until the end of April. And when we say “experimental” we mean experimental – Nordic and Japanese cuisine with French and Arabic influences and British produce. No, us neither.

Dishes include: caviar tartelette, burned hay, Malabar pepper, burrata; foie gras, with rose petal salmon, yuzu, Piedmont hazelnuts; and Black Cod, caramelised Miso, Naganegi Dashi, daikon. The full menu costs £120 per head. Wine pairings, by Four Seasons Hotel London at Park Lane’s Bar Manager Ivan Arena are also available.
